  •     2.5 lbs beef chuck roast, cut into 1-inch cubes
  •     1 onion, diced
  •     3 cloves garlic, minced
  •     2 tbsp tomato paste
  •     1 tbsp dried oregano
  •     1 tbsp ground cumin
  •     1 tsp ground cloves
  •     1 tsp ground cinnamon
  •     1 tsp ground black pepper
  •     1/2 tsp salt
  •     4 cups beef broth
  •     1 cup water
  •     2 dried ancho chiles, stemmed and seeded
  •     2 dried guajillo chiles, stemmed and seeded
  •     2 dried pasilla chiles, stemmed and seeded

    1. In a large pot, heat a little oil over medium heat. Add the beef and brown it on all sides.
    2. Add the onion and garlic to the pot and cook until the onion is translucent.
   3. Stir in the tomato paste, oregano, cumin, cloves, cinnamon, black pepper, and salt. Cook for 1 minute.
   4. Pour in the beef broth and water. Bring to a boil, then reduce the heat to low and simmer for 1 hour.
    5. While the beef is cooking, toast the ancho, guajillo, and pasilla chiles in a dry pan over medium heat until fragrant, about 1-2 minutes per side.
    6. Transfer the toasted chiles to a blender and add 1 cup of the cooking liquid from the pot. Blend until smooth.
    7. Strain the chile mixture through a fine-mesh sieve into the pot with the beef. Discard the solids.
    8. Simmer for an additional hour, or until the beef is tender.
    9. Serve the birria with corn tortillas, onions, and cilantro. Enjoy!
